It belongs to the Solanaceae family of flowering plants and the wild Solanum melongena species of the esculent variety.

This plant grows in warm and cool climates, it is very sensitive to the cold and needs a period of warm growth in order to enjoy a good product and an optimum flavour.

The aubergine contains 90% water, very few fats, fibre (if eaten with the skin) and few calories, which makes it suitable for weight loss diets.

Aubergines contain:

  • Vitamins: E, A, C, B1 and B2.
  • Minerals: rich in iron, calcium, phosphorus and potassium.
  • Others: folic acid, fibre and carbohydrates.

Properties and benefits. Recommended for:

  • Circulation.
  • Reducing cholesterol.
  • Preventing arteriosclerosis.
  • Eliminating fat after a meal.
  • Stimulating bile.
  • Preventing cancerous cell growth in the stomach (as vitamin E is one of the best antioxidants).

It is not recommended for those with cardiac problems.
